The small shoots are then thinned out and eaten, leaving only one plant every 20 cm. Like kohlrabi, this mustard has been selected for its bulging stem, just below the petioles. This fleshy stalk is made into fermented pickles in the Sichuan region. It's also an excellent vegetable for stir-frying, which attenuates its pungent taste. Imagine a plump broccoli stalk with a mustardy taste... that's tsa tsai!\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In addition to the plump stem, we also eat the leaves, petioles and flower stalks. The seeds yield a rather mild mustard.
