Monarch celeriac is a much-loved variety that has already been awarded the Royal Horticultural Society's Order of Merit. It produces beautiful, apple- to cantaloupe-shaped balls with creamy, white flesh.
Whether sliced raw into fine julienne strips and coated with a remoulade sauce, or baked in a salt crust, celeriac is an essential preserving vegetable on Northern European tables. A little less potent than parsley, it is highly aromatic and versatile in the kitchen. Eat them all winter long in purées, soups, Waldorf salads, gratins, or simply roasted for a long time in the oven!

Sow 10-12 weeks before the last spring frost, at 5mm intervals, on the surface of potting soil. Keep the soil moist at around 20°C (maximum 24°C). Transplant when 2 true leaves have grown (it takes a long time...). Transplant after any danger of frost at 22-30 cm, rows 50-90 cm apart.
