Petroselinum crispum var. tuberosum, Apiaceae
Parsley is an ancient vegetable worth discovering: a type of parsley grown for its highly aromatic root, which is harvested in autumn or the following spring. A powerful flavor reminiscent of celery root and parsnip. Excellent in soups and stews, or on its own as a purée, grilled, steamed... or, of course, simply raw. 95 days.
