Violet de Tours' is a beautiful, easy-to-grow celery, with magnificent purple-tinted green ribs that are crisp when served raw in salads... It's also a good candidate for cooking, which will reveal its aromatic depth. Like other old-fashioned celery, its strength is far superior to most of today's livid, juicy celery, but it doesn't fall into the very pronounced taste of "cut-leaf" celery. An ideal candidate for Bas-du-Fleuve-style 'herbes salées'. Native to Touraine in France.

Sow 10-12 weeks before transplanting to the garden, 5 mm apart, on the surface of the potting soil. Keep the soil moist at around 20°C (maximum 24°C). Transplant when 2 true leaves have grown (it takes a long time...). After any danger of frost, transplant at 15-20 cm intervals, rows 36-90 cm apart.
