Belleville sorrel is easy to grow and is one of the first salads of spring. Perennial, it can remain in place for several years.
Its clumps of light-green leaves have a distinctly lemony taste: zest for salads, soups and fish sauces. Sorrel prefers cool, deep soil. Its leaves are of good quality in spring, leave something to be desired in midsummer, then become beautiful and good again in autumn. Harvesting begins 3 months after sowing and then as needed. Hardy up to zone 2!
